This PR updates the contributing guidelines to clarify what kinds of contributions are most helpful and to document the current stance on language-specific SDKs.
Changes:
- Added a “What kinds of contributions we're looking for” section outlining preferred contribution types (bug fixes, SDK ergonomics, documentation).

Added a section outlining the types of contributions welcomed for the project, including bug fixes, SDK improvements, and documentation enhancements.
In particular this clarifies that we're not planning to maintain further language-specific SDKs in this repo. This follows on from recent discussions and the decision we made on that.
